I saved a fudge recipe this week from Big Man's World, so decided to make it.
Very simple-no sugar
2 cups chocolate chips no sugar-I used dark chocolate chips no sugar
1 cup almond butter-nothing added
1 tsp vanilla extract.
recipe said 10"x10" pan-I had a 9"x9" pan that was perfect. I think the 10" would be too big.
Melt the chocolate and almond butter either stove top or microwave add the vanilla stir-pour into pan and refrigerator.
Back in 2009 I was making my own extracts These are well aged now and the vanilla is soooo good-like a more expensive vanilla extract.
Will see how this sets up.
Update: chocolate set up-had to give it a taste--soooo good would make again I probably need to freeze most of this so I don't eat too much-smiles
We are beginning with gorgeous weather today that will last awhile. I so need to work outdoors but at this point I need to be near my husband in case he needs me. The hospice nurses are coming every day now-they have been so helpful and supportive.
Hoping your weather is awesome too

Your recipe sounds wonderful, but dangerous. I'm pretty sure I would eat the whole thing!
ReplyDeletehaha This turned out soooo delicious-just dark chocolate with no sugars, and I used a natural peanut butter with no additives or sugar, and a splash of my homemade vanilla extra-it set up a bit ago so had to try a piece-so good smiles
DeleteLooks wonderful. I can smell the deliciousness from here. Janice

Hi Cathy, yes this was very easy to make and very good too
DeleteHi Kathy, wow that fudge looks delicious! My mother used to always make us fudge. Your recipe sounds a lot healthier than mine. :). My favorite fudge recipe is called Chocolate Cherry Fudge. I use 1 12 ounce bag milk chocolate chips but you could just as well use dark chocolate or bitter sweet. I melt them over a double boiler, until glossy. You have to be careful not to over heat as the chocolate will loose its shine. Then I mix in a whole jar of marshmallow cream. Then add about a cup and a half of chopped maraschino cherries. You can also add walnuts if you like but that is optional. Then refrigerate overnight. The next day the fudge is to die for and the cherries have liquid around them just like the chocolate covered cherries that they sell around Christmas time. :). Have a restful evening ahead!
ReplyDeleteOh yum your recipe sounds perfect for Christmas time-thank you for sharing
DeleteThis looks delicious 😋
ReplyDeleteThis turned out really good-and interesting it tastes like fudge not peanut butter
DeleteI haven't made fudge in quite a few years and this recipe sounds tasty and easy. It's amazing how so few ingredients can make something that sounds so good. I hope your nice weather lasts and you can get some outside work done. It's about raking time at my house.
